One Pot Vegetable Chilli

The cast iron pot provides a stove to table vessel in which we can build and create plenty of flavour, sealing in each ingredient one at a time with our loving attention, playfully adding spices to create a dish just right for our table, with the option of switching up the next day and everyone being able to personalise their meal a little.
By popping this into the Wonderbag to slow cook we not only save a little time and energy but make a meal that tastes of slowing down, being cared for as we come home after a long day to a meal ready for us, it tastes of trusting in Nature and our community support to help us along the way.

Ingredients

A stick or two celery

Onion/leek

Garlic

Ginger

Peppers

Tomatoes

Tin tomatoes

Beans and or lentils (soaked dried beans are cheap, baked beans are great, red lentils disappear )

Turmeric (any other spices like coriander or cumin to give a warm glow to the day)

Lemon juice, stock, soy, Worcester Sauce, something sweet – all to add flavour

Green herbs such as parsley or coriander
Directions
- 1. Finely chop and gently sizzle celery, onions and ginger
2. Add you sliced pepper (and any other veg you like, grated carrot etc is great)
- 3. Add spices and black pepper, cooking all the while on a medium heat
4. Add in pulses/beans/lentils to stir and warm through
- 5. Add tin of tomatoes and swizzle tin with water, adding this to the pan
6. Add your flavours – stock, lemon, garlic, soy, Worcester
- 7. Taste check and add flavours to suit (I try and add more garlic and ginger to be almost raw here as they are immune supports especially when raw) lemon juice is a great salt alternative btw.
Add your lidded pan to the Wonderbag, and allow to slow-cook in the bag for a few hours.
